One of Galway’s best loved and oldest pork butchers Herterich’s Pork Butchers has, quite literally, brought home the bacon at the Associated Craft Butchers of Ireland Regional Sausage & Pudding Competition 2018.

Herterich’s Pork Butchers, which are on Lombard Street won gold in the Speciality Sausage Category for their Sweet Italian.

The butchers also won best Lifestyle Sausage for their Laos Sausage and of course the now world-famous pudding won under the Pudding Innovation Category for the Morcilla Spanish Black Pudding.

They now will compete with butchers from across the island of Ireland in the Craft Butchers National Sausage & Pudding Competition which will take place on September 26th.

“We are thrilled, literally we absolutely love what we do and have been delighted how well our costumers have reacted to our new products, we’re lucky we really do have the best customers.  It is just really great to be recognised by such a prestigious organisation and one we are really delighted to be apart of.

All the team should be proud of the hard work and creativity gone into this, it’s a family business and all the staff are like family in here. Now we are going up against the rest of Ireland and are really hopeful that we can showcase to Ireland, the passion, the tradition and the craft of what we do here in the west,” said John Heterich.

A stalwart of the community in Galway

Herterich’s Pork Butchers opened their doors in 1940, and have become a stalwart of Galway’s community. Their sausages and pudding especially have become a thing of legend, with so many of Galway’s leading restaurants including Dela, Kai, Handsome Burger, Huntsmann, Sheridans, Front Door, Biteclub, The Universal and Caribou using their pork for all dishes from breakfast, brunch, lunch and dinner.

“Having a good relationship with your wholesale clients is very important, bouncing ideas of each other is a great catalyst for creativity.”

The butchers now is ran by John Heterich with his team of John Duffy who has been the backbone of the establishment for nearly 40 years, Jeff Ryan, Alan Derrick, Evan Smith, Gavin Lane and Anne O’loughlin and they are still very traditional in their process.

They use all-natural casings, and they make all their products by hand on site. You can pick up the world’s best smoked rashers, Seasonal sausages, Christmas ham, slow roast joints and of course a variety of puddings.
